1. Pour the oil from the tinned fish straight into a large frying pan, ready for shallow frying. See Note 1 if cooking with mackerel in brine, water or fresh mackerel.
2. In a large mixing bowl, combine all of the mackerel recipe ingredients, (except the white cheddar ranch dressing!)
3. Heat up the oil in the frying pan, and roll the mackerel patty recipe into 8 golf ball size balls.
4. Then flatten in the palm of your hands to 1/2 an inch thickness and carefully place in the pan and pan-fry each side for about 3 minutes until they're golden and can hold their shape.

2. Add everything else except the tinned mackerel, fresh herbs and seasame seed oi and simmer for 5 minutes until the sauce is no longer graiy from the yogurt.
3. Stir in the tinned mackerel in olive oil and simmer and stir for 2-3 minutes. Do not boil as you don't want to destroy the extra virgin olive oil benefits if using.
4. Serve with a twist of lime juice, sesame seed oil and fresh coriander/cilantro leaves.
