Hi, Kari. Let me know how it turns out for you. You can definitely use more sugar if you'd like, though for me, I've found that you really don't need that much for good candied jalapeno peppers. Made these last week for the first time. Followed directions exactly and made sure all the seeds were in pot with the peppers.
