To prepare the calzone dough: in a bowl, combine the lukewarm water with the honey, and stir to dissolve. Sprinkle the yeast over top, and using a fork, gently mix the yeast into the honey water just until it begins to dissolve; set aside to allow the yeast to become foamy, about 8-10 minutes.
Mix together 1/2 cup lukewarm water and yeast in a small bowl. Let stand until foamy, about 5 minutes. Combine 1/2 cup water, olive oil, honey, and salt in a large mixing bowl. Add 1 cup flour and mix well. Mix yeast mixture into flour mixture. Add remaining flour, 1 cup at a time, until dough is well combined.
Turn dough out onto a lightly floured surface. Knead dough until it is elastic, about 5 minutes. Place 1 teaspoon olive oil in a large bowl; lay dough in the bowl and flip to coat with oil. Cover and let rise until almost doubled in size, about 40 minutes.
