DirectionsStep1Boil 5 cups of water and add tripe.Step2Cook for 1⁄2 to an hour till tender. Don’t overcook tripe since it is good gooey or chewy.Step3When done, slice tripe 1 1⁄2 inch x 1 inch. Put aside.Step4In another pot, boil 6 cups of water and add oxtail.Step5When it starts boiling, remove the scum (the white foamy stuff) from meat. Lower heat to medium-low.Step6Toss-in 15 pieces peppercorn.Step7Add smoked pork hock. Note: This adds so much flavor but optional.Step8Cut 1 medium onion into 4 pieces (quartered) and add to the mixture.Step9Simmer till oxtail and pork hock are tender.Step10Cut pork hock to 6 pieces.Step11Leave the meat in the broth. Set aside.Step12Heat oil in pan over medium heat.Step13Fry carrots and potatoes at the same time till golden. Set aside.Step14On the same pan, fry sausage. Set aside.Step15Add oil if needed.Step16Saute onion for 3 minutes or until soft.Step17Toss-in garlic and cook for 3 minutes.Step18Add tomato sauce and paprika.Step19Stir in cooked oxtail, smoked pork hock and tripe.Step20Saute 3 - 4 minutes.Step21Stir-in sausage.Step22Pour oxtail/smoked pork hock broth.Step23Simmer for 10-15 minutes.Step24Stir-in garbanzos, carrots, potatoes, green and red pepper.Step25Simmer for 1 to 2 minutes.Step26Season with fish sauce or salt.
