1. In a skillet on top of the stove, fry the lean ground beef and onion. Drain off any grease. Add all the remaining ingredients and cook on medium heat for 15-20 minutes. Add cheddar cheese to the top of the dish and let it melt.
2. Serve in a bowl with avocado slices and a spoonful of sour cream on top. This skillet it dish is very versatile. You can serve over rice or with tortilla chips. We love that it is so easy and the hominy makes this southwestern dish a bit different. This skillet meal makes 6-8 servings.
