1. Melt the butter in a cast iron skillet over a medium heat. Add the shrimp and sauté for about 5 minutes until the shrimp are mostly pink all over, stirring frequently.
2. Add the white wine to deglaze the pan, then add the heavy cream, Dijon mustard, and Cajun seasoning. Stir well.
3. Continue to simmer for another few minutes, then add some grated Parmesan cheese. Allow it to melt into the sauce - it will thicken the sauce a little too - then serve, garnished with chopped fresh parsley and black pepper.

Stir in the remaining butter, cajun seasoning, salt, heavy cream, parmesan cheese and parsley. Cook for another 3-5 minutes or until the sauce has thickened. Add the Palmini and the shrimp back in and cook for another minute or until everything is heated through.
3. Serve with grated parmesan cheese and some fresh parsley over the top. Optional: If you like a little extra heat and flavor, you can also serve with a sprinkling of the cajun seasoning on top.
