Prickly Pear has a lot of genetic variation. The one we have in our front yard produces an orange fruit. I’ve noticed that I can use the ones that don’t look ripe for eating raw and for recipes. Can you mix the pears with other fruits to make jelly?
Cactus handling tips: pick your prickly pears with all metal tongs and place in a metal bowl (cactus spines stick in plastic and silicone). Burn off the spines before handling the fruit. I used the metal tongs and my gas range burner.
