1. In a steaming pot pour and whisk together the water, vinegar, Sherry, old bay, and kosher salt. Bring the pot to boil over medium heat. ⠀
2. To a steamer basket placed over the boiling liquid, evenly layer 1/2 the onion shrimp. Sprinkle the old bay over the shrimp. (I use 2 tbsp per batch; this amount of shrimp will take 2 batches.)⠀
3. Cover and steam the shrimp over constant medium heat for 6-8 more minutes. The shrimp will be pink and begin to tighten slightly. Remove the basket from the heat immediately to avoid overcooking. ⠀
4. To make the old bay butter, whisk the butter with the old bay and a pinch of salt. Dip the peeled shrimp and pieces of onion in the butter. Enjoy!!! ⠀

1. If your shrimp are frozen, make sure to thaw them before steaming.

4. Add the bay leaves, ½ of the mustard seeds, ½ of the old bay seasoning, and ½ of the whole peppercorns on top of the bed of onions. Place the pressure lid on and turn the valve to VENT. Set the function to steam and the time to 2 minutes. When the time is up remove the lid. If the pin is up in the back, wait for it to go down and then remove the lid.
