Once the oil in the pot shimmers, carefully add in the seasoned pork shoulder. Work in batches, as necessary, to avoid overcrowding the pot (which prevents browning). Cook for 4-5 minutes per side, until nicely browned. Transfer the browned pork to a plate & set aside.
2. If needed, add the remaining 1 tablespoon olive oil to the same pot used in Step 1 & reduce heat to medium. Once hot, add in the soffritto (carrots, onion, & celery), seasoning with 1/2 teaspoon each kosher salt & ground black pepper & stirring to combine. Cook, stirring occasionally, until deeply browned, 15-20 minutes.
3. Add the garlic to the pot with the soffritto. Stirring constantly, cook until fragrant, 1-2 minutes. Add the tomato paste to the pot, stirring to coat the soffritto. Cook 2-3 minutes, until browned.
4. Increasing the heat to medium-high, pour the white wine into the pot. Stir constantly, using a wooden spoon to scrape up any browned bits that may have formed at the bottom of the pot. Cook for 4-5 minutes, until the wine is almost completely absorbed into the soffritto.
