What makes an au gratin an au gratin is the cheese. The potatoes are still thinly sliced and covered with a creamy sauce, but they have cheese layered in between.
Bake: Cover the pan with aluminum foil and bake for 45 minutes in a 400 F degree oven. The sauce should be nice and bubbly around the edges. Then remove the foil and bake uncovered for 30 minutes, or until the potatoes are cooked through. Potatoes au gratin will have a golden brown crust when baked properly.
Russet potatoes are the best and most common type of potatoes to use for au gratin potatoes. Gruyere cheese is also most commonly used, but I like to use cheddar cheese, or half gruyere and half cheddar since my family likes that flavor better.
