DirectionsStep1Preheat the oven to 350 degrees, lightly spray two 5-inch cake pans with olive oil.Step2Whisk the egg and zero calorie brown sugar until fluffy.Step3Fold in the yogurt and applesauce.Step4In a separate bowl combine the flour, baking powder, cinnamon, and ginger.Step5Add the dry ingredients to the wet ingredients and mix until well combined.Step6Fold in the grated carrots, raisins and walnuts (if using).Step7Transfer the batter to two 5-inch cake pans, and bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.Step8Let the cakes cool in the pan completely, then place a plate over one, and gently flip to dislodge the cake.Step9Cover the top with 1/2 cup of frosting.Step10Remove the second cake by placing a new plate over the top, and gently flip.Step11Add the second cake to the frosting topped cake, and add remaining frosting to the top.Step12Slice into 12 slices (don't worry, this is a double decker cake- it's big!) by cutting in half, then in half again so you have 4 equal triangles. Cut 3 slices out of each of those 4 slices.Step13VERY IMPORTANT: Do not frost the cakes until they are completely cooled. Or the frosting will melt and become a big messIngredientsIngredientsadd Olive Oil Spray2 Eggs½ cupAll-Natural Zero Calorie Brown Sugar1 cupGreek Yogurt (0%)½ cupUnsweetened Applesauce⅔ cupAll-Purpose Flour2 teaspoonsBaking Powder1 teaspoonGround Cinnamon1 teaspoonGround Ginger1 cupCarrot (grated)¼ cupRaisins (optional)¼ cupWalnuts (optional)1 ¼ cupsLow Calorie Cream Cheese FrostingSee moreNutritionalNutritional69 Calories1.1 gTotal Fat29 mgCholesterol9 gCarbohydrate124 mgSodium6 gProteinFrom loseweightbyeating.comRecipeDirectionsIngredientsNutritionalExplore furtherSkinny Carrot Cake - Allrecipesallrecipes.comLow Sugar Carrot Cake - Everyday Healthy Recipeseverydayhealthyrecipes…Lite Carrot Cake - Allrecipesallrecipes.comThe ULTIMATE Healthy Carrot Cake Recipe (No Refined …youtube.comKeto Carrot Cake (3 grams carbs!) - The Big Man's Worldthebigmansworld.comRecommended to you based on what's popular • Feedback

    1. Preheat the oven to 350 degrees F. Lightly spray a 10-inch springform pan with nonstick spray.
    2. In a medium bowl, stir together the all-purpose flour, whole wheat flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
    3. In the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl, beat together the egg, egg whites, brown sugar, canola oil, and vanilla extract on medium speed until well combined. Add the grated carrots and beat for 1 minute. Add the pineapple and shredded coconut and beat just until incorporated. With a wooden spoon, stir in half of the flour mixture, just until the flour almost disappears. Stir in the buttermilk. Add the remaining flour mixture, continuing to stir in by hand, just until combined. Gently fold in the walnuts and raisins.
    4. Pour the batter into the prepared baking pan. Bake for 40 to 45 minutes, until a toothpick inserted into the center comes out clean. (Check at the 30-minute mark—if the edges of the cake are browning too quickly, tent with foil, then return to the oven to finish baking.) Remove the cake from the oven and let cool completely in the pan. Run a dull knife, such as a butter knife, along the edge of the cake to loosen, then unmold it. Carefully transfer the cake to a serving plate.
