Common spices found in BBQ sauce include garlic, onion powder, mustard, liquid smoke and black pepper. There’s also a lot of sugar. You’ll find white or brown sugar, coconut sugar, honey, molasses, maple syrup, and jams in nearly every bbq sauce recipe. None of these ingredients are low carb or keto friendly.
In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce. Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes.
In a deep frying pan (Dutch oven?), melt the butter and gently fry the onions, chilies and garlic for about 5 minutes. Lower the heat and add all the other ingredients, except the Bourbon, stirring after each addition. Simmer for about 10 minutes, stirring frequently, then add the Bourbon and cook for another 3-5 minutes.
