The scientific name of black mustard is Brassica nigra. Traditional yellow mustard is a popular condiment made from the seeds of the mustard plant. The mustard seeds are ground down and then mixed with water, vinegar, lemon juice, wine, or other liquids, salt, and often other flavorings and spices.
Fried in hot oil until they pop, the seeds release their full intensity, pairing well with cumin, coriander, curry leaf and fennel seeds. The small brown and black mustard seeds have a greater potency than their larger yellow brethren, which in contrast has a milder, balanced flavour.
Place the mustard powder into a saucepan and add the strained liquid. Mix until well combined. Cook over low-medium heat until it thickens. Add stevia (if used), extra virgin olive oil and season with salt.
