Made in less than 15 minutes, this easy weeknight dinner tastes like a restaurant dish but is easy enough for any cook to make at home. Many people are intimidated by cooking fish at home, but pan searing fish is an easy technique everyone can master.
A flexible, thin metal spatula (such as a fish spatula) works best. The cod might stick a bit at first, but work gently and firmly and you'll get it. Place the butter in the pan. With a spoon, spread the pat around the fish. Tilt the pan away from you so that the butter pools, then baste the fish with the butter a few times.
All of these are firm-bodied, white fish. I opted to skip the coating and make this pan fried cod with no breading and no flour. Not only is it faster and easier to prepare without the breading, but it also makes the recipe a little lighter and leaves room for the lemon butter sauce to shine.
Set up an assembly line from left to right with the fish, the butter, the cheese mixture, and the sheet pan. Use a fork to dip each piece of fish in the butter on both sides, then in the cheese mixture, coating both sides and patting the topping onto the cod with the fork.
