For the sauce, heat the wine and lemon juice on medium low heat in a pot. Once the wine begins to simmer, slowly whisk in and melt small handfuls of the cheese at a time until it is all incorporated and whisked until smooth and creamy. Place in a serving bowl or fondue pot. To reheat, heat on half power for 30 seconds and stir.
Many fondue recipes call for lemon juice, white wine or chicken broth. This recipe doesn’t require any of those! Just a few very basic ingredients (butter, milk, corn starch, salt) along with cheddar and swiss cheese. That’s it! And you can swap out the cheese with any of your favorite cheeses for a slightly different flavor.
The original recipe here makes about 1 ½ cups of fondue. In a medium sized pot over a low heat, melt the butter. Then, whisk in the xanthan gum and salt. Continue whisking until the butter thickens and froths.
