Cuts of lamb that are popular for slow cooking include the shoulder, leg, forequarter, shanks, neck chops, lamb ribs, and some sausages. These cuts are usually tougher because they have lots of connective tissue and fats, but this makes them perfect for slow and low methods of cooking.
Preparing the low carb lamb stew is easy; simply add the following to a slow cooker bowl: boneless lamb stewing meat, peeled and chopped turnips, sliced or quartered mushrooms, beef broth, onion powder, garlic paste, salt and pepper. You could also add in some red wine if your diet allows. Cook on a high heat for 3 hours, or low heat for 6 hours.
Add the broth to your slow cooker. Season the lamb shanks with salt, pepper, garlic powder, cumin, and rosemary. Place the shanks in your slow cooker. Cover and cook on HIGH for 4 hours or on LOW for 7 hours, until the lamb is very tender. When the lamb shanks finish cooking, set the slow cooker to WARM. Transfer the cooked lamb shanks to a plate.
