1. Line two baking sheets or large platters with parchment paper. It’s helpful if they will fit in either fridge or freezer.
2. Make small piles of pecans, using 5 to 6 pieces per pile. Overlap the pecans some to reduce gaps so the caramel doesn’t seep through.
3. In a medium microwave-safe bowl, add the caramels, half of the cream (reserve the remainder), and heat on high power to melt. It will probably take about 3 to 4 minutes total, but you must stop and stir the mixture every 30 seconds so you don’t burn it. Alternatively, you can melt caramels on the stove over low heat, using caution and stirring frequently. **(see notes below on melting the caramels)
4. Add about 1 tablespoon caramel to the top of each pecan pile; set aside.

1. PREPARE YOUR BAKING PAN: Line a baking sheet with parchment parchment paper.
2. ARRANGE YOUR PECANS: Place 4 pecan halves around the same size and arrange them into clusters. Use one smaller pecan piece for the head.
3. MAKE YOUR CARAMEL: Combine the pecan butter with sweetener, vanilla extract and ground cinnamon and mix until smooth. If using maple syrup - be sure to add the almond flour to firm up the dough. If the mixture is too runny to form into a ball, place in the freeze for 5-10 minutes. Form into 2/3 Tbsp sized discs and place on top of pecan clusters.
4. MELT CHOCOLATE. Melt the chocolate and oil in a double-boiler over the stove or in a heat-safe bowl in the microwave in 10 second increments, stirring well in between. Spoon a small amount of chocolate on top of each turtle. Add a sprinkle of sea salt & garnish with a pecan, if desired. Allow the chocolate to set up – you can place the pan in the fridge or freezer to speed things up.

1. Preheat oven to 350 degrees F (176 C) and roast pecans on a bare baking sheet for 10-12 minutes (watch carefully as not to burn). Set aside.
2. In the meantime, add pitted dates to a food processor and pulse/mix until small bits remain or a ball forms. Then add almond meal and pulse again. If dough appears too sticky to handle, add more almond meal and pulse to combine.
3. Using your hands, form the date mixture into 8 small, round discs and place on a parchment-lined pan. Add four toasted pecan halves to make the turtle “legs,” then freeze 10 minutes to harden.
4. In the meantime, melt chocolate and coconut oil over a double boiler on the stovetop (a ceramic or glass bowl set over a saucepan with 1 inch simmering water will work) or in the microwave in 30-second increments and set aside.
