Ladle ½ cup broth into blender. Add 2 cups cilantro and purée until smooth and very bright green, at least 1 minute. Stir chicken into broth and heat through, followed by cilantro purée. Season with salt, if needed. Divide posole among bowls.
Most of the rest of Mexico would use ancho chiles but you can also include chiles de arbol or other chiles to make your own version of red pozole (pozole rojo). Be careful, chiles de arbol are very hot!
