1. Start by boiling water in a large pot if you're using raw or dried noodles. Next, combine all the ingredients for the sauce in a medium size bowl and stir together until the sugar dissolves.
2. Add one tablespoon of the sauce to the chicken to use as a marinade. Let the chicken marinate while prepping the vegetables.
3. If using raw egg noodles, boil for 2 minutes or until al dente. If using dried noodles, boil them one minute less than the package instructions state. The noodles should be al dente and not overcooked.Drain and rinse the noodles under running water and then drizzle a tiny amount of oil on them to prevent them from sticking together. Note: the yellow egg noodles I used in the photo came pre-cooked. Simple rinse them under hot water to separate the strands.
4. Heat a wok or pan to medium high heat and add the oil. Cook the chicken until fully cooked and then remove it from the pan and set it aside.

1. In a medium bowl, combine the chicken with 2 teaspoons each of cornstarch, water, and oil. In a wok over high heat, add 2 tablespoons oil, and sear the chicken for a couple minutes until browned. Remove from the wok, and set aside.
2. Add another couple tablespoons of oil to the wok, and add the garlic. After 10 seconds, add the cabbage and carrots. Stir-fry on high heat for a minute and add the wine in a circle around the perimeter of the wok.
3. Add the noodles and chicken back to the wok and mix well from the bottom up for about 30 seconds. If the noodles aren't coming apart, add about 1/4 cup water to the noodles to loosen them up a bit.
4. Then cover the wok for one minute. Remove the cover and add the soy sauce, dark soy sauce, sesame oil, salt, and sugar. Stir-fry for 30 seconds, and add the bean sprouts and scallions. Stir-fry for one more minute and serve.
