This Traeger beer can chicken recipe is the best chicken ever. Beer brine the chicken, add a simple rub and let it sit on a beer in the wood pellet grill. Combine the beer, salt, sugar, soy sauce, and black peppercorns in a large Dutch oven or deep tub* and whisk them together. Place the chicken in the brine and add a few cups of ice.
Open your can of beer and place it inside the chicken (still in the can), by sliding the chicken down on top of the open can. Only 1.5 inches of the bottom of the can should remain protruding from the chicken. Once your chicken is fully prepared, then you can start to preheat your Traeger Grill.
I have cooked beer can chicken many times on my charcoal grill, but this is much better. I followed this recipe on my first try and it was delicious. I experimented other times with different rubs, binders and even injections. My advise to those that gave low rates and negative comments...try again!!!
