Prepare the grill for indirect cooking over medium heat (350° to 450°F). Open the beer can and pour off half of the beer. Using a church key–style can opener, make two more holes in the top of the can. Set the can on a flat surface and slide the chicken over the top so the can fits inside the cavity.
(Salt, pepper, onion powder, garlic powder, and paprika.) Open the beer and either pour out or better yet drink about half the beer. Place the beer can on a solid surface and put the chicken cavity over the beer can. Prepare the grill for indirect cooking.
Beer can chicken is generally smoked but if you have a gas grill you can use a smoker box to achieve that characteristic smokey flavor. When I lived in Texas, my dad used to add soaked mesquite pods to the charcoal briquettes on his grill to get a smoky flavor. It was awesome.
Place the hens over the 1/2 full cans of beer. Slide the beer cans into beer can holders on a baking sheet. Click for beer can holders. Fold the wings behind the hens to keep the tips from burning. Place the baking sheet, with the hens on it, inside of the grill and close the lid.
