1. Preheat oven to 300 degrees.
2. Take out the beef brisket from your fridge and let the meat come to room temperature. Also make sure that it will fit into your chosen ovenproof Crock-Pot and if it doesn’t, go ahead and cut it in half.
3. As the meat warms up, mix together all the spices in a small bowl (curry to cinnamon). Score the fat on the top of the brisket, making large "X" marks with a knife. And then give the meat a deep massage with the spice blend.
4. Place a Crock-Pot on the stove with 1-2 tablespoons of oil and bring it to a sizzle over medium-high heat. When hot, throw in the brisket, fat side down, and let it brown for 5 minutes. Then turn to the other side and brown again, adding more oil if necessary. Take out the meat, let it rest on a plate, and repeat if you have two cuts of meat.

Place fat side down in the Dutch oven and cook until brown on all sides, about 8 to10 minutes. Transfer the meat to a plate and set aside.
3. Discard about half the fat, then add the onions and cook over medium heat until browned and tender, about 10 minutes. Pour in the vermouth and cook until reduced by about half. Nestle the brisket into the onions fat side up, add the broth; bring to a simmer and bake, covered, until the brisket is fork tender, about 1 1/2 to 2 hours. Uncover, scatter the carrots around the brisket and cook until the carrots are tender, about 30 minutes more.
4. Transfer the brisket to a cutting board, cut the fat off the top and thinly slice the meat across the grain. Return the meat to the braising liquid and serve immediately or, cool to room temperature in the sauce, cover and refrigerate overnight. When ready to serve reheat in the sauce.
