Chicken Kebabs are a fun keto recipe to make on your grill over the summer months. This chicken recipe uses spices from the East like turmeric and red pepper flakes to add flavor. These spicy chicken kebabs are grilled over indirect heat for a longer period of time to help retain the moisture and juiciness of the chicken thighs.
To a skewer, rotate adding in chicken, peppers, and onions, repeat until the skewers have been filled about ½ way (about 3-4 pieces of each). We end up with about 10 skewers, depending on how big the chicken breasts were. Preheat a grill to 400º Fahrenheit. When you make the grill this hot before placing the skewers on, they won’t stick as much.
To flavor the chicken kebabs we use garlic and onion powder, crushed red pepper flakes, turmeric and salt & pepper. These chicken thighs have just the right level of spice. Not too hot but just enough to let you know these aren’t your traditional grilled chicken kebabs.
Bake for 50 minutes – 1 hour, turning halfway through until cooked through. Rest the chicken while preparing the kebab. Fill each of the wraps with 1 tablespoon of garlic sauce, ¼ cup of lettuce, ¼ of the tabbouleh and 1 ounce of cheddar cheese. Slice the chicken and add to the wraps, top with hot sauce, if using.
