Cut your bananas into thirds. Place the self raising flour, caster sugar, vanilla essence, milk, eggs and bananas into your Thermomix bowl and mix for 10 seconds on speed 5 Preheat your frying pan with a little bit of butter over a medium high heat and add tablespoon amounts of the banana pikelet mixture.
They are usually made with self raising flour, 1 egg or 2 eggs and approximately 1/2 cup of milk. Of course, my recipe is optimized so that your banana pikelets have the best flavour and an airy consistency.
These Pikelets are delicious when served on their own, however we also like to serve them with extra chopped banana pieces or with a thick and yummy layer of raspberry jam. These easy Banana Pikelets make a great breakfast or lunch box snack. Both regular and Thermomix instructions included. Place the bananas in a bowl and mash with a fork.
You can place the pikelets in separate zip lock bags and freeze for up to 2 months. If you don't have bananas, add ½ cup fresh or frozen berries or sultanas to the mix before cooking. You can make plain ones too.
