In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.
On low speed, mix in mashed bananas, extract, sour cream, baking soda and salt until combined. Add in flour a little at a time continuing to mix until well-blended. Reserve a small handful of blueberries for the top of loaf. In a separate bowl, place the remaining blueberries and sprinkle with the 4 tbsp. flour.
This blueberry banana bread bakes in about an hour. A tester should come out clean. Let the bread cool in the pan for 15 minutes before transferring to a cutting board to slice and serve.
