1. Preheat oven to 400 F.
2. Cut the spaghetti squash in half lengthwise and scoop out the seeds with a fork. Very lightly brush with olive oil (or spray with cooking spray) and sprinkle with salt and pepper. Lay squash face down and bake for 30-40 minutes.
3. In the meantime, dice onion and saute in large skillet with cooking spray. Add in the mushrooms and saute until they are both cooked - about 8 minutes. Remove from skillet and transfer to a large mixing bowl.
4. Using the same skillet, ground the turkey in cooking spray. Add the chicken broth for the turkey to cook in (this important in keeping the turkey juicy and moist despite it being super low fat. Season with salt, pepper, and garlic and break up the turkey as much as you can. Once cooked thoroughly, transfer to the large mixing bowl.

1. To make the spaghetti squash, preheat oven to 350 degrees F and cut squash right down the middle. Scoop out all the seeds and place cut side down on a baking sheet lightly sprayed with oil so they don’t stick.
2. Bake squash in the oven for 45 minutes until tender.
3. Meanwhile, drizzle oil into a large pan over medium heat and saute onion and garlic until fragrant, about 2 minutes. Add ground beef and cook until meat is no longer pink; drain if necessary.
4. Stir in crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, Stevia, salt and pepper and bring to a boil. Reduce heat and allow sauce to simmer until the spaghetti squash has finished baking.
