1. Preheat your oven to 400. Line a baking pan with Parchment Paper or Aluminum foil and spray with nonstick as we are not using oil.
2. Mix together the potatoes, onions, and garlic in a medium mixing bowl. Next, in a large mixing bowl, stir together the flour, baking powder, eggs and salt. .
3. Now add the contents of the first bowl to the second bowl and mix together. You can do this using your hands if needed. To make the pancakes, use about 2-3 tablespoon size balls of batter. Flatten this to about 1/4-1/2″ in thickness between your hands and then place it onto the prepped pan. Repeat until your pancakes are formed.
4. Bake for 15 minutes, flip over, and then bake for 10-15 minutes or until browned. Serve with applesauce and/or sour cream to make this even more authentic!

2. Wipe the stand mixer clean, and mix together the almond flour, salt, baking powder, instant potato, and shredded cheddar.
3. Mix in the heavy cream and almond milk. Then, using a spatula (not the mixer), fold the whipped egg whites into the batter. The batter should be consistent, but there will be some small lumps from the cheese and the instant potato soaking in the liquid.
4. For pouring the batter, use a ladle if you can. Each potato pancake will be about a ¼ cup of batter. No potato pancake is perfect in size or shape! Melt a ½ tablespoon of butter in a wide skillet per 4 pancakes (about ⅛ tablespoon per pancake) over medium-low heat. Ladle 3-4 pancakes into the hot butter, and use the ladle to gently spread the pancakes out into circles.
