This atsara recipe is a Filipino relish made normally with very fresh green papayas. Sauerkraut can also be used. Toss grated papaya with 1/4 cup salt together in a large bowl; allow to sit for 1 hour. Drain liquid from papaya and rinse thoroughly.
Boil the vinegar, sugar, ginger, salt and pepper uncovered in a cooking pan for 2 – 4 minutes. Pour the vegetable mixture cover for 5 – 8 minutes, then remove from the pan to a glass bowl, let it cool and then refrigerate. Achara Instructions. Place grated papaya in a wide container. Sprinkle papaya with rock salt and toss well. Pour in water and squeeze out the juice from the papaya and set aside. Add peppercorns, raisins, ampalaya, belle pepper, ginger, onion and garlic. Toss well. Pour vinegar mixture over the vegetables.
