Using a cheesecloth, strain the plant out into a large measuring cup or bowl. Next, use a funnel to add the sweetened water to the bottles until they are two-thirds of the way full. Add about a cup of the plant liquid to each clean, dry soda bottle-more if you want your ginger beer stronger, less if you want it less intense.
Once cool, pour 1/4 cup of the ginger beer concentrate in a glass and add 1 1/2 cups of sparkling water or more to taste. Optionally, add a few ice cubes.
