1. Position oven rack in the center (or just below center) of the oven. Preheat oven to 350°F [175°C]. Grease and flour three round cake pans. Line pans with parchment paper for easy release and clean-up. NOTE: 8" or 9" cake pans will work for this cake. (They must, however, all be the same size!)
2. Using an electric mixer, beat butter on medium-high until light and fluffy. Add coconut and vanilla extracts and salt and mix to thoroughly combine.
3. Once the cake is completely chilled, trim the layers.

3. Place one cake layer down onto your cake stand. Spread about 1 1/2 cups of frosting onto the cake layer. Top with another layer and repeat with another 1 1/2 cups of frosting. Top with remaining cake layer and spread the remaining frosting onto the outside of the cake. Sprinkle on coconut and lightly press into the sides of the cake so it adheres.
