Preheat oven to 350°F (180°C). Line a 9×5-inch loaf pan with foil and spray with cooking spray. In a bowl, whisk together oat flour, baking powder, baking soda, and salt. In a separate bowl, beat rolled oats, yogurt, oil, egg, and honey until well-combined.
Bob’s Red Mill also sells a pre-made gluten free oat flour, which is a fantastic go-to baking ingredient for me. Or, you can just as easily blend up oats and sift them into a smooth, fluffy flour for this honey oat bread recipe! Preheat oven to 350°F (180°C). Line a 9×5-inch loaf pan with foil and spray with cooking spray.
First blend part of the oatmeal into oat flour. Place 2 1/2 cups whole rolled oats in a blender or food processor and process into a fine flour. To the oat flour add the remaining liquid ingredients, blending until smooth. Add 1 additional cup of rolled oats and pulse briefly to combine. Pour into a greased 8X4 pan and bake for 50-55 minutes.
So the initial 2 1/2 cups gets blended into oat flour (or use 2 1/2 cups oat flour), and the remaining 1 cup gets pulsed in at the end. So you are right, it’s 3 1/2 cups total if you are making your own oat flour. I made the recipe using unsweetened applesauce, and full fat Oat milk.
