Now on to this simple low carb soup recipe. Just add some chopped zucchini and dry minced onion (the spice) to a microwave safe bowl. Cook for 4 minutes. While that is cooking, mix boiling water with the Better than Bouillon along with the spices. Pour the broth, olive oil, zucchini and half of the cheese into the blender.
While the soup is cooking, heat the rest of the olive oil in a skillet over medium-high heat. Add the zucchini and cook until just tender, about 5 to 10 minutes. Season with salt and pepper. Right before serving, add the zucchini to the soup.
Add chopped zucchini and dried minced onion to a microwave bowl and mix. Microwave for 4 minutes then add to a high speed blend. While the zucchini is cooking, mix the Better than Bouillon with the boiling water and then pour it in the the blender. Add the spices, olive oil and half of the cheese.
Trim the zucchini, halve lengthways, then chop into 2-centimeter (3/4-inch) chunks. Stir into the pan, then season with a little sea salt and a good pinch of black pepper.
