Here is our recipe for zeppole with soft potatoes. Cook the potatoes in boiling water. Let cool and remove the skins. Crush them with a potato masher. On a clean work surface, make a fountain with the flour. Add the eggs, baking powder, sugar, softened butter and mashed potatoes in the center.
Similar to the Austrian ‘krapfen,’ but with a hole in the center, Neapolitan fried zeppole can be enjoyed all year round, although Carnevale is one of the most popular times to try them. Here is our recipe for zeppole with soft potatoes.
Cut the dough. Using kitchen shears, snip off pieces of the zeppole dough that are about 1 1/2 tablespoons in size. Scrape the dough off with a spoon and into the hot oil. Fry them. Fry the zeppoles for about 2 minutes on each side. Transfer them to a paper towel-lined plate using a slotted spoon when done. Sprinkle the donuts with sugar.
Directions. Heat the oil and fry the zeppole a few at a time. Prick balls with a skewer as they fry, so the dough will bubble out and they become crunchier and more golden. Drain them on paper towels. Dredge them in the cinnamon-sugar mixture. Serve hot or cold.
