1. In a medium mixing bowl, use a whisk or a fork to mix together the whole wheat flour and the cornstarch. Then add in the ground cinnamon, baking powder and flaxseed meal. Attempt to break up any clumps in the ingredients at this point as well.
2. Next, in a large mixing bowl, beat together the sugar and the egg.
3. For the next step, we will add the ingredients from the first bowl to the second bowl. Do this by adding half of the ingredients at a time, mixing gently between additions. Then add the vanilla extract and the milk. Mix this until just blended as it is important to to not overmix the batter. If you are adding chocolate chips gently fold them in using a rubber spatula.
4. Set the batter aside (I often place my batter in the refrigerator if I will be taking longer than twenty minutes to make my pancakes).
