This keto summer squash recipe is a frequent low carb side dish at our house this time of year. The squash absorbs the butter as it cooks, making it flavorful and delicious!
For the last month, we’ve been pulling out loads of yellow summer squash from the garden. It’s a nice low carb vegetable that can be used as a noodle paleo lasagna or used as a substitute in zucchini recipes.
Slice yellow squash into 1/4 inch slices and season with olive oil, sea salt, and black pepper. Roast for 10-12 minutes. Make cheese sauce. In a saucepan, combine cheddar cheese, heavy cream, garlic, sea salt, and black pepper. Heat until melted and smooth.
