1. Preheat oven to 425ºF.
2. Microwave potatoes in a microwave safe bowl, covered in water, for 8-10 minutes, or until fork tender but still firm (soft enough to smash/flatten). Let cool for 5 minutes and then carefully drain.
3. Rub a little bit of olive oil on rimmed baking sheet and place potatoes onto oil. Carefully smash/flatten with a potato masher or a fork. Rub potatoes with 1 tablespoon olive oil (a brush also works well for this), and sprinkle with salt and pepper.
4. Place chicken next to potatoes. In a small bowl, mix together parsley, olive oil, mustard, lemon zest, garlic powder, salt and pepper. Rub this mixture onto each chicken thigh with a spoon or your hands.

1. Preheat oven to 375 F.
2. In a large oven-proof skillet, cook bacon over medium heat until crisp and fat is rendered. Transfer cooked bacon to a plate and pour out all but 1-2 tablespoons bacon grease. Increase heat to medium-high.
3. Season both sides of chicken thighs generously with salt, freshly ground pepper, and Italian seasoning. Carefully place chicken thighs in the skillet skin-side down, taking care to place them so they will cook evenly without having to move them. Cook for about 7 minutes or until skin side is nice and evenly browned and releases easily from the pan. If the skin sticks, continue cooking until skin releases easily. Flip chicken thighs over.
4. Transfer skillet to oven and cook for 13 minutes or until internal temperature reaches 160º F. Carefully transfer chicken thighs to another plate and place skillet on the stovetop. Take special care to always, always use a pot holder from this step forward; the handle will stay very hot.

Allow the first side to cook about 4-5 minutes or until nicely browned, then flip and cook the second side for the same amount of time, until browned and just cooked through.
3. Remove the chicken pieces from the skillet onto a cutting board or plate and lower the heat to low. Add the broth, lemon juice, garlic and 2nd Tbsp of ghee to the pan and stir, scraping up any browned chicken bits too. Allow the sauce to cook/simmer for about a minute or two until thickened, then add the chicken back to the pan.
4. Flip the chicken in the pan to gently coat with the sauce and add the rosemary if you choose. Cook for one more minute, then remove from heat and serve hot. Enjoy!
