Cuisine: Italian,MediterraneanCategory: DinnerServings: 4Total Time: 30 mins1. In medium skillet, heat oil over medium-low. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add shallot and cook, stirring, until translucent, about 2 minutes. Add 2 tbsp wine and 1⁄2 tbsp lemon juice and cook, scraping bottom of pan occasionally with wooden spoon, until most liquid has evaporated, about 3 minutes. Let cool.
2. Transfer shallot and garlic to small bowl. Add parsley, tarragon, thyme, salt, and black pepper. Mash in butter. Refrigerate until butter hardens. (Butter can be made up to 1 day ahead.)
3. Preheat oven to 475°F. In medium ovenproof casserole dish or skillet, arrange shrimp, tails up, in circle so they touch one another for support. Place bits of chilled herb butter around shrimp. Pour remaining 2 tbsp wine and 1⁄2 tbsp lemon juice in bottom of dish.

Total Time: 25 minsCategory: Dinner, Fish And SeafoodCalories: 316 per serving1. Prep: Peel and de-vein the shrimp. This can be done the day before, but because shrimp is highly perishable make sure to cook the shrimp by the next day! Juice the lemon. Chop the garlic and parsley and slice the scallions.
2. Cook: Place a large saute pan (I used non-stick) over medium heat. When hot, add the butter, tilting the pan to melt the butter and coat the bottom of the pan. Add the garlic and saute until it begins to soften. Add the shrimp to the pan and cook until the bottom half of the shrimp turns pink. Turn each shrimp over with a pair of tongs and add the red pepper flakes.
3. When the shrimp looks almost cooked through, add the lemon juice and then the wine. Cook for just a minute to let the liquid reduce. Turn off the heat and add the parsley and scallion, stirring to mix thoroughly. Salt and pepper to taste.
4. Plate and top with Parmesan cheese if desired.
