Place the ribs on the SmokeFire and cook for 2 hours. After 2 hours, remove the ribs from the smoker. Place 2 sheets of butcher paper, or aluminum foil on a flat surface. Add 2 tbsp apple juice, 1 tbsp honey and 1 tbsp bbq spice on the foil. Place the ribs bone-side up on top of the seasonings. Wrap the ribs leaving a small air gap.
Wrap the ribs leaving a small air gap. Return the ribs to the SmokeFire and cook for 1 hour more. After 1 hour, remove the ribs from the smoker, unwrap from the foil and place back on the grill. Cook the ribs for 45 minutes unwrapped.
After cooking, slather the barbecue sauce on the rack of ribs and finish under the broiler or on the grill. This step caramelizes the sauce. When the sauce caramelizes, it tightens up a bit, giving it that sticky, finger licking texture that makes these ribs so delicious.
If you want to try this in the oven, rub the short ribs with the bbq seasoning and place in a baking dish. Cover with aluminum foil and bake for 3 hours in a 300 °F oven. Take off the foil for the last ½ hour. I’ve made a low carb bbq sauce for lots of my recipes.
