4. For finger shaped biscuits, form the dough into a rectangle, cut AFTER baking: Take your cookie sheet or pan and cover it with a silicone mat or parchment paper. Drop the dough in the middle. Start shaping the mount with your hands, pressing down on it hard. Form a rectangle of about 20 by 15 cm. Make the sides straight by holding a knife or spatula vertical against the side of the rectangle, and press down on the cookie while pressing the side of the blade or spatula against it. Gently press a fork into it to create the decorative pricks. You'll cut the biscuits immediately after removing them from the oven, while still hot and soft.
