The finished, delectable beans aren’t quite as saucy as the traditional, creamy baked beans we all know and love, but they are delicious in their own kind of way. Don’t even think of them as a classic baked bean dish. They’re calico beans: simple, tasty, flavorful. And I adore them. (PS: they are killer served with these chicken or steak kebabs.)
There are 3 ways to bake calico beans: the oven, the slow cooker and the stovetop. We’ll talk about that in a minute, but you’ll prepare the beans the same no matter which method you choose. In a skillet over medium high heat, brown the ground beef along with the bacon and onion.
1 ½ cup bacon, chopped. 2 1 pound lean ground beef. 3 1 (15 ounce) can pork and beans. 4 1 (15 ounce) can kidney beans, drained. 5 1 (15 ounce) can butter beans. 6 1 (15 ounce) can lima beans, drained. 7 ½ cup ketchup. 8 1 cup packed brown sugar. 9 1 cup chopped onion. 10 3 tablespoons white wine vinegar.
Even carbs are okay, but it’s best to get them from vegetable sources and not low carb junk food. To make a low carb baked beans dish, you really need a good bean substitute. Black soy beans are the best that I’ve found. Black soy beans are great to use in Mexican dishes.
