The original recipe for the Tartine Country Bread can be found in the book, Tartine Bread by Chad Robertson, published in 2010. I bought this book, but then was so intimidated by the fact that the recipe and instructions were over 40 pages long. As a bread baking friend describes it, it's "epic."
Percentages: Bread Flour 100% Water 78% Salt 2% 25 g sourdough starter fed the night before, stirred down before scooping out. Place a medium jar on the scale and weigh in 25g sourdough starter. Zero scale and add 50ml tepid water. Stir, zero scale and add 50g bread flour. Stir thoroughly and scrape down sides to tidy the jar.
Sprinkle some flour on top of your dough and divide into two halves. Take a half, flip it over and pull each of 4 edges from under onto the top. Then, flip the folded dough over, so the seam is on your work surface. You want to form loose boules here by using your hand and your dough knife.
