So, is sourdough bread low carb? Yes, sourdough bread contains fewer carbohydrates because the sugars and starches are consumed during the fermentation process. Depending on how the dough is prepared, a small piece can contain as little as 5 grams of carbohydrates.
Add 900 grams of white-bread flour and 100 grams of whole-wheat flour to bowl and use your hands to mix until no traces of dry flour remain. The dough will be sticky and ragged. Cover bowl with a towel and let dough rest for 25 to 40 minutes at room temperature. Add 20 grams fine sea salt and 50 grams warm water.

Instead of following Chad Robinson's Tartine starter formula in his book where he feeds 50% whole wheat, and 50% all-purpose, I feed my starter 100% rye flour. I've found that my starter shows noticeable activity when fed rye exclusively.
