In a food processor, add dried chilli, red chilli, dried shrimp, shrimp paste (belacan), garlic, shallot, ginger, blue ginger (galangal), turmeric root, candle nuts and lemongrass stalk, then pulse for 5 minutes until a thick paste forms. Add cooking oil to a large saucepan then add the laksa paste and cook for 5 minutes until fragrant.
It’s a mild-medium spiced paste perfect for making big bowls of Keto Laksa. Place the dried chilis into a heatproof bowl, pour over the boiling water and set aside for 10 minutes. Roughly chop the cayenne chili, lemongrass and galangal. Add to your food processor and blend until finely chopped.
Saute 2 tablespoons of Laksa Paste in 1 tablespoon of Coconut Oil over high heat for 3-5 minutes. Add 1 cup of stock (chicken, fish or vegetable), bring to the boil then add ¾ cup of Coconut Cream. Remove from the heat and serve with your favorite toppings.
