Semolina flour is made from a different strain of wheat than all purpose or bread flour. Semolina is made from Durum, a high protein wheat.
But the only way to avoid messing up your diet is to use low carb bread recipes for the bread machine. Most of the recipes you find for low carb bread tastes like egg. But these recipes make the bread come out as it should, like bread. Of course, a bread machine is required for each of these recipes.
