Season each pork hock to taste with sea salt and freshly ground black pepper. Spread the onion and garlic all over the bottom of a roasting pan. Place the pork hocks on top of the onion-garlic mixture, drizzle some olive oil over them, and pour on the beef stock. Place in the oven and roast for about 25 minutes or until the skin is a bit crispy.
Preheat oven to 375°F. Combine mustard, olive oil, and seasonings in a bowl. Rub over the outside of the pork loin. Place on a baking sheet (with vegetables if desired). Roast 18-20 minutes per pound or until pork reaches 145°F. Broil 2-3 minutes and remove from the oven. Rest 15 minutes before slicing. Do not overcook.
Ingredients. 1 4 pork hocks. 2 2 onions, diced. 3 6 garlic cloves. 4 3 bay leaves. 5 ½ tbsp. juniper berries. 6 2 cinnamon sticks. 7 ¼ cup olive oil. 8 1 cup beef stock. 9 Sea salt and freshly ground black pepper.
Combine all ingredients in your slow cooker. Cover pot and cook on low heat for 8 to 10 hours until desired tenderness is achieved. To know if it’s tender enough, check if the meat already starts falling off the bone. Once cooked, drain the ham hock and allow it to cool down briefly.
