2. Allow steaks to sit at room temperature 20 to 3o minutes before grilling. Preheat gas grill to high (450 to 500 degrees). To test a charcoal grill temp. you should be able to hold your hand over the grate for only 2 to 4 seconds.
3. Place steaks on the grill and cook 4 to 5 minutes, then turn over. Cook an additional 3 to 4 minutes for medium-rare (130°F). Using an instant-read thermometer check temperature and cook until the desired doneness using the below temperatures as a guide. Watch the temperature - it changes fast!
4. Remove steaks from grill and cover with foil. Allow steaks to rest for about 5 to 10 minutes before serving. The temperature of the steaks will increase a few degrees as they sit.
