Spelt is a whole grain related to wheat that adds a nutty flavor, but whole-wheat flour works well too. Combine flour and salt in a large bowl. Add 1 tablespoon oil and mix with your fingers until crumbly. Slowly add water and mix until the dough just comes together. If the dough doesn't come together easily, mix in up to 2 tablespoons more water.
I found I can tolerate spelt very well, without spiking but each person will need to experiment with their own levels if watching blood glucose. Put all ingredients in the breadmaker pan, and use the mixing cycle. I use the timer to prove for 40 minutes, then bake for 1 hour.
The recipe will work too. I simply love to use spelt because it has a similar flavor to wheat flour. But it has an extra boost of nutrients and a low level of gluten. This means it is more digestible for people with a sensitivity to gluten.
Whisk together the spelt flour, Sucanat (unrefined cane sugar), spices, baking soda, and salt in a large bowl until everything is completely incorporated. The combination of warming spices like cinnamon, ginger, nutmeg, and allspice is beautiful in this dessert!
