Calories: 124 per servingCategory: Bread1. Add the water and honey to a large bowl, or the bowl of your stand mixer. Sprinkle the yeast overtop and let it sit for ten minutes. After ten minutes, it should be foamy. If the mixture doesn't foam, discard - you need new yeast.
2. Add the milk, olive oil, 2 cups (300g) of the flour, and the salt. Stir with a wooden spoon until a loose dough forms.
3. Add the remaining flour 1/2 cup at a time, kneading between each addition, until a smooth, springy dough forms. This should take 8-10 minutes. It should be quite smooth and not really sticky. If you're using a stand mixer, use the dough attachment for this.
4. Place the dough into a large greased bowl and cover with a tea towel or large plate. Let it rise in a warm, draft-free place for one hour, or until doubled in size. This is called proofing.

Total Time: 55 minsCategory: Asian Diabetic RecipesCalories: 107 per serving1. Combine flour and salt in a large bowl. Add 1 tablespoon oil and mix with your fingers until crumbly. Slowly add water and mix until the dough just comes together. If the dough doesn't come together easily, mix in up to 2 tablespoons more water. Knead on a lightly floured surface until the dough is smooth and no longer sticks to your fingers, about 2 minutes. Cover with a damp cloth; let rest for at least 15 and up to 30 minutes.
2. Divide the dough into 8 balls and cover with a damp cloth. Lightly flour a rolling pin and a clean work surface. Flatten 1 dough ball and roll it out, picking it up and rotating it to make sure it isn't sticking, until very thin and about 5 inches in diameter. Transfer to a lightly floured baking sheet and loosely cover with plastic wrap or a towel. Repeat with the remaining dough, spacing the breads on baking sheets so they don't touch.
3. Heat a large cast-iron skillet, heavy skillet or griddle over medium-high heat. Add one bread and cook until small bubbles appear, 30 seconds to 1 minute. Flip, then brush the top side with a little of the remaining oil and cook until lightly puffed, 30 seconds to 1 minute more. Transfer to a plate and cover with foil to keep warm. Repeat with the remaining breads, stacking and covering them as you go to keep them warm and pliable.

Frequently Asked Questions

How do you make a spelt dough?

Spelt is a whole grain related to wheat that adds a nutty flavor, but whole-wheat flour works well too. Combine flour and salt in a large bowl. Add 1 tablespoon oil and mix with your fingers until crumbly. Slowly add water and mix until the dough just comes together. If the dough doesn't come together easily, mix in up to 2 tablespoons more water.

Can you eat spelt without spiking?

I found I can tolerate spelt very well, without spiking but each person will need to experiment with their own levels if watching blood glucose. Put all ingredients in the breadmaker pan, and use the mixing cycle. I use the timer to prove for 40 minutes, then bake for 1 hour.

Does spelt flour work?

The recipe will work too. I simply love to use spelt because it has a similar flavor to wheat flour. But it has an extra boost of nutrients and a low level of gluten. This means it is more digestible for people with a sensitivity to gluten.

What are the ingredients in spelt flour cake?

Whisk together the spelt flour, Sucanat (unrefined cane sugar), spices, baking soda, and salt in a large bowl until everything is completely incorporated. The combination of warming spices like cinnamon, ginger, nutmeg, and allspice is beautiful in this dessert!
