When feeding meat through the grinder, be sure to only use the food pusher that came with your meat grinder. Cold meat and equipment helps ensure that the fat in the ground meat doesn’t get soft and smear the meat into a paste. When smearing happens, the fat in the meat may leak out during cooking, leaving you with dry and mealy meat.
