1. In a stock pot or dutch oven, melt 2 tablespoons butter over medium high heat. Brown the beef in batches, about 3 to 4 minutes. Transfer browned beef to a plate or bowl.
2. Reduce heat to medium and add remaing 2 tablespoons of butter. Add the onion, carrot, and garlic and saute until translucent, about 2 to 3 minutes.
3. Add 1 cup of the beef broth and scrape up any brown bits (deglaze). Add remaining broth after the pan is deglazed.
4. Add all remaining ingredients to the pot. Return the beef to the pot too. Stir to combine.

1. Remove the chuck roast from the refrigerator to come to temperature. Quarter the mushrooms and set aside. Wash and chop the vegetables, including the garlic, putting them together in a bowl for later. Trim the excess fat off of the chuck roast (pot roast) and cut into 1-inch cubes. (I used 1 1/4 pounds of meat, but you may use more if you wish.) Thoroughly mix two teaspoons of oil into the beef.
2. Place a dutch oven or heavy bottomed pot on the stove over medium heat. When hot, add the rest of the oil and swirl to coat the bottom of the pot. Add the mushrooms and stir to coat. Do not disturb them for 2 minutes. Stir and let them cook for two minutes more. Remove the mushrooms from the pot and add them to the other vegetables.

5. Add ½ cup beef broth and vinegar to the dutch oven and scrape up the browned bits on the bottom of the pan over medium-high heat.
6. Add the beef back to the skillet along with the beef broth, tomato paste, Worcestershire sauce, and bay leaf. Bring to a boil, reduce to a simmer, and cover. Cook over low heat for 1 ½ hours or until beef is tender.
