Category: Main CourseCuisine: Thai, AsianTotal Time: 35 mins1. Season chicken pieces generously with salt and pepper. Heat 1 tbsp oil in a pot over medium-high/high heat until hot and shimmering. Add chicken and spread in a single layer. Cook undisturbed for 1-2 minutes. Flip chicken to the other side and cook for an additional minute until golden but not cooked through. Remove the chicken from the pot with a slotted spoon and set aside. (Do not throw away any chicken juices as you will want to add them back later.)
2. Turn the heat down to medium and add 1 more tbsp cooking oil. Add in Panang curry paste and cook in the oil for 1-2 minutes, stirring constantly. Add in sliced onion, garlic and ginger. Cook for about 3 minutes until softened. Turn heat up to high and add in bell pepper, seared chicken and the juices. Stir to coat in the curry mixture then add in 1 can of coconut milk and 4 cups of chicken broth. Bring to a boil over high heat then immediately turn heat down to low. Cover and cook on low heat for about 15 minutes.
3. While the soup is simmering, prepare your 'noodles' by draining and giving them a quick rinse.Once the soup has been cooking for 15 minutes turn off the heat and remove the pot from the burner.Squeeze the juice of 1 lime and add in Root Rebels Shirataki noodles. Taste for seasoning and add salt and pepper as desired.
4. Serve in bowls and garnish with fresh basil, cilantro, lime wedges and sliced chilis if desired.*Note* You can also divide the noodles between the bowls and then add soup. Enjoy!
